When displaying my vintage sets, I put the cards in numerical order, leaving each side to show.
Except...all variations that have a difference on the front of the card goes behind the COR so the front shows when you flip the page. All other VAR of the same card, or VARs that have a difference on the backs go at the end of the binder, in numerical order.

I do not keep my sets in binders, but if I did use binders I would have the variation in the pocket right next to the base card. This would keep the set in numerical order and keeps variations/errors next in order with the base card.

I have also considered doing this, and then put the other vars/errors that aren't tracked in the db after the set.

Are there specific types of binders you use for these sets? Do you put your cards in penny sleeves then in the pages? I'd like to display my sets this way instead of in boxes. Thanks for the info.

I put the Var/ERR cards after the set just befor the inserts That way it makes it easier to know if I am missing the Base card and the Var.

Ever since Topps started producing variations and parallels I've started doing one card per binder.
Here are my 2020 Topps & Topps Update sets

Most regular type 3 ring binders can be used, However you need to make sure that the binder cover is long enough to cover over the sheets completely the standard school binders tend to be just a little bit too short.
As for penny sleeves in the pages, for older cards up to early 2000s they work OK but more modern cards with all their varying thicknesses some cards can't fit with the penny sleeve.

Personally I put the variation in numerical order right after the base so I can see the differences side by side.
But right now for me, as I'm working on OPC hockey Calgary Flames, there's only a few variations for my team. So it's not too much extra binder space.

I could probably buy the already complete sets cheaper somewhere else, but I like getting my maildays.
