I don't know if this helps you, but here's my approach. I've created my own database and I use this excellent web site to populate it with card lists. For sets like these I enter the regular set, and then I create a parallel set of the same name with "- cello" added. So for the cello version of this set, it's entered as 1991/92 Score Kellogg's - cello. This is kind of similar to the way 90/91 Kraft panels, for example, are included separate to the regular set on this web site.
When entering the cards in this parallel cello set, I then just click the individual cards. Unlike Kraft panels, the contents of the individual cello packs can vary. I have a comment field for each collected card which I use to record the card condition on some of my older cards where condition is an issue; in this case I use it to enter the number of the other card in the pack. This allows me to distinguish between the pack with Leetch/Blake and the pack with Leetch/Hull, for example. I don't know if you can add comments like that, but maybe creating a parallel set is the way to go.
