Has anyone seen any larger 1991 stadium club versions? I don’t see the large version anywhere on the site.

Pretty sure they are just cut from a sheet. They weren't issued to the market as cards.

These have been brought to Admin's attention in the past (by me, as I have a few of these), and they are not premitted to be listed on the site (and you'll notice that they are not listed on any other site that checklists cards). I add them to the collection using the regulkar card then adding the comment in the collection details of "Oversized" or something like that.

Do you know why they're not permitted to be listed on the site? The site includes cutout cards from bottom of boxes, which seems similar (ex. 1986 box card bottoms - we list these individually and as a sheet).

The cards on the bottoms of boxes were placed there by the card manufacturer for the purpose of making that a card.
These are taken from previously uncut sheets (not intended for distribution) and essentially "altered" to be different from the cards as they were truly released. The same applies to the 2-card "panels" (and other card count configuration panels) that we see all over the place on ebay, they are not eligibile for inclusion here.

How does this work? Did Topps print up jumbo sized sheets of 1991 Stadium Club? As in, were TSC sheets bigger than usual to accommodate larger image space for each card?

Y'know, I would love an actual answer on that myself. My assumption is they printed oversize to enable the clean full-bleed without risking border lines, or parts of other images showing up on slightly off-center cards.
I think the images you can find of uncut sheets kind of confirms that.
