is there an easy way to find out who has the most cards on your want list?

On of the easiest is to run a Trade Match. Go to your collects page and scroll down to the "Trade Matching" link. Clicking on the link will take you to the "Trade Matching page. There you can set parameters filtering out options of the type of trades matches you want. After selecting the filter button, a list will be created showing the rank of those members with the highest number of possible cards for trade at the top.
