It has come to our attention that, despite what our release notes say on this set ("Topps specifically calls this set "Die-Cuts", but the actual cards are not die-cut and instead are regularly shaped cards.") that there ARE die-cut versions out there, as well as die-cut versions that are serial-numbered out of 75.
Does anyone know what Topps was doing here? I have only been able to find that they were releasing the "die-duts" and an autographed version (of a subset of the players). Nothing about a non-die-cut version or a SN version.
Any knowledge anyone can share to help us get this set / these sets listed properly will be greatly appreciated.

Darn good question. I had gotten ahold of the non die cut cards in a lot I picked up for future trading purposes. When looking at the scans we have, nothing die cut there either. I didn't see any references to card actually being die cut, and in inverse, a non die cut set either. Maybe I looked in the wrong places. Even COMC/eBay shows non die cut cards, same as when I first looked. Or I'm blind.
Sigh, let's hope they aren't becoming Panini, or worse, Leaf/Wild Card.

My only input, "die cut" is not a hyphenated word.

I think the first 2 you linked are from the regular Topps set and the none Die cut is from Topps Chrome Update. I have Gwynns that are like that and that is how they were released.

After looking at these closer, I think this is correct. The die cut versions have just the Topps logo on the front and make reference to Topps being a registered trademark on the back, the non-die cut version has the Topps Chrome logo on the front and references Topps and Topps Chrome as registered trademarks. Sorry for any confusion.
