Just bought a blaster box of 2020 Topps Updates Baseball yesterday. A box of 100 cards I got 2 Red Sox :( no short-prints, a coin card, plus 12 dozen insert cards. However, I DID recieve 2 cards of Pele Alonso, U-148 on the back is a serial number 0251/2020. My other Pete Alonso does not have a number on the back of it. So, is the numbered a variant?

That sounds like the gold parallel numbered to 2020.

The card physically is the SAME color as the other w/o a number, so maybe Topps screwed up in the printing process,

There is a gold foil parallel without the /2020 SN. Is this what you mean or is it missing the U-148#

Does your card look like this one? I'm also betting you have the Gold parallel. They're not as obvious as they used to be without the borders so it's easy to miss!

Why is it not obvious? Ask Topps (???)
What is "gold"? The right "border" is "goldish" instead of being clear.

Because Topps has put zero effort into base and insert set design for more than a decade now
It's funny, I was one of the people clamoring for Topps' base sets to go borderless since the Stadium Club cards have always looked amazing that way, but the lack of borders completely nerfed some of the parallels which were differentiated only by their border color (except for the serial-numbered versions), so now I realize why that was a bad idea.
