What is the difference between Artist's Proof and Artist's Proof Blue? Looking at the images in the checklists they seem to include the same colors, i.e. there are blue cards in the regular and non-blue card in the Blue.

I'm also interested in recreating my main childhood collection, which consisted of mostly 1974 and 1978-1982.

It's the logo. Look at card #8 for both sets. The regular AP has a gold foil Artist's Proof stamp while the Blue AP has blue foil.
