If I don't have some sort of sports on in the background, then I usually have ghost hunters, paranormal activity, searching for sasquatch, etc. on in the background.

I mostly watch baseball while organizing. Since I'm on the east coast, I find it best when it's a 8 p.m. game. It's not too late, so you can get things done efficiently. I'd watch Mandalorian while doing cards, but then I'd forget the cards and just pay attention to that. Like previously said, it has to be something that doesn't require full attention and you've probably seen before but you'd watch again.

Most audio and for sure video would be a distraction for me. With music I'd be wanting to look up lyrics from the songs, and sometimes turn to watch a video of the song to see the artistic interpretation of the lyrics. And most videos capture my complete attention. I have to pause or rewind them when watching them especially if my wife asks a question or all of sudden needs to discuss the storyline or a text she just received. So, sorting is out of the question for me while either watching or listening to something.

Based on your tastes listed, I would recommend Umbrella Academy on Netflix or any of the Netflix Marvel shows (which I think are now all on Disney+). Any of the Star Wars TV shows are great too.
Mayfair Witches on AMC is good.
Or you can go and binge some classic TV shows like the original Fantasy Island (which is a hoot! So many jokes went over my head as a kid) or Quantum Leap.

Sometimes a hockey or baseball game but usually I have Stingray music on listening to Classical music. Keeps me calm and focused and doesn't distract me from what I am working on.

That's exactly what I do at work. I'm in the building alone in the evening, so I need something making noise. It's usually TBS (Young Sheldon & The Big Bang Theory) or CMT (Last Man Standing & Mom). I don't need to pay attention to it or even see the TV, but I still make sure I can see one if I want to for the sight-gags.

I sort cards at night after I get home from work. Most games are over by then so my TV is either on SportsCenter or I play something from my DVR. I prefer stuff that you really don't need to see anyway, just listen to. My go-to's would be stuff on History Channel or Discovery, such as The Curse of Oak Island, Naked & Afraid, Swamp People, Mountain Men.
I agree that any show about cooking or restaurants would just make me get hungry, even without seeing the food. But Bar Rescue on Paramount is another show I can "watch" while dealing with cards. You really only need to SEE the final 5 minutes or so after the transformation.
I love sitcoms, so I can't have new episodes of those on my TV while trying to do anything besides watching the show. If I messed with cards during the afternoon before work, my TV would be on a baseball game (now), The Weather Channel or Science Channel.
