I found them when Something Wicked came out. The early ones are the best, especially when Barlow is belting them out when he came aboard. The lat few albums didn't move the needle for me. Athens is a beast of a live albums. Great before modern production methods tooks over. I saw Symphony X when they supported Blind Guardian on tour right after Odyssey came out.

I like a lot of stuff. My absolute favorites are pretty straightforward: The Beatles, Pink Floyd, Bob Dylan, David Bowie etc. But then I have so many bands that I really like. Talk Talk, Radiohead, London Grammar, Big Star, Thelonius Monk, John Coltrane, alt-j, The Cure, Porcupine Tree, Emancipator, Wilco, Gotye, Tame Impala, Morphine, The Smiths, Dead Can Dance, Spoon, Jeff Beck, Beck, The Shins, Yes, Black Sabbath, Sufjan Stevens, Michael Kiwanuka, The Flaming Lips. I could go on for days. Really glad to see others mentioning bands I like, such as Agnes Obel, Black Rebel Motorcycle Club, and Porcupine Tree. I trend towards modern non-mainstream.
I'm probably the only one on this thread who likes psychedelic electronic. My favorites are Sphongle, Younger Brother, and Hallucinogen, which all contain Simon Posford (Hallucinogen).

Collective Soul is truly underrated. I saw them live in 2019 with Gin Blossoms. Ed is such an entertaining and charismatic front man and Jesse Triplett was amazing on lead guitar. I took this video of his solo during December: https://www.youtube.com/watch?v=YstO8Z2P9ZI

Saw Collective Soul back in 1994 (first time), saw them a couple other times as well. Back in 1994, this little, unknown band from Canada were their opener, and I actually became a fan of theirs as well - and someone else mentioned them - Moist. Their album Silver is still a staple in my playlist (especially the song "Picture Elvis"). Another time I saw them, they were touring with the band Live ("Lightning Crashes" fame). I like a lot of Live's stuff, but just "like".
I have seen a lot of bands, and that could be another thread entirely. Some other bands I have seen and lke quite a bit:
Steely Dan (with Becker!)
Duran Duran
Moody Blues
King's X
Bela Fleck & the Flecktones
Bruce Springsteen (with & without the E Street Band)

I'm with you on your list! I like a ton of different stuff too.
For those on here listing a wide variety of styles and genres, may I suggest Radio Paradise? They play everyone John1942 listed here and more (including Younger Brother and Shpongle!) It's my got to for music, I could never come up with a playlist as good and as varied as RP.

I could probably buy the already complete sets cheaper somewhere else, but I like getting my maildays.
