I don't mind the chaos if the store doesn't mind my taking my time to look stuff over, pull some, put some back, hem and haw, and even risk the possibility that I might walk away with only a few cards. At one of my LCS, though, I always feel like they're grumbling about why I'm looking at the disorganized mixed sport singles and not hovered over the Pokemon or MTG display case.
It's hard to commit to shopping somewhere that you don't really feel welcome, chaos or not.

I have mixed feelings about unsorted messes. It's one thing if you are able to get a steal on something but it's another if you are specifically looking for commons or something of a certain year.
Two examples...
A card shop near me (no longer in business) was like this. Complete mess. The owner could pull boxes of any given year you wanted but you couldn't just browse and find something without his help. On top of that, prices were okay but not great. As a result, most people didn't deal there too often because it was just a pain for little gain.
On the other hand, there is a card dealer I see at most card shows I go to who has either 10 cent boxes or $1 boxes that he'll line his tables with. He'll usually do the $1 boxes for a few shows then turn whatever cards are left into 10 cent boxes after they've been picked through and condensed down. In both cases you'll find $5+ cards once in a while but you have to take the time to look. I spend less time with the $1 boxes because it takes longer to find cards I want but for 10 cents, I'll put all the cards of a given set I'm working on aside and then pull this site up on my phone and go through my checklist. Even if it's a common, I'll take it for 10 cents. And more often than not, when he brings the 10 cent boxes, I'll find at least a dozen cards that catch my interest that I'm not specifically looking for.

yep, to me, unorganized but priced is cool with me, but organized and you don't know what the cost will be, not so much...

I know a few like this.
One is in Nashville and is total chaos. Found some gems after digging a few hours. And it was all dirt cheap.
Another is in Clio, MI where each box is marked with what set it is, but is usually not a complete set (rule 1 = don't break up a set), and they're pretty decent on pricing your whole haul at the end. Trick is getting them to let you come in and dig....
Have seen a couple other back rooms that I didn't get a chance to root through, but would have loved to....

I have a mix of both and so it depends on what my "mission" is. If I know I am looking for something in particular I will go into the organized shop where all the boxes are labeled and prices are marked (typically .10 per card). This is great for set building as mostly base with sometimes getting lucky with an SP or two. If I have time to burn and just want to hang out I'll go the chaotic place and dig through boxes to find things I didn't necessarily need. Here you just hand him the stack and he'll say how much you owe based on him just skimming through. Long winded way of saying I like and appreciate both.

My local shop was unorganized, but it had a lot of stuff
Then I moved.
Now my local shop is much better organized, but the inventory is a lot less.

I gotta admit I like a bit of both. My primary LCS is very organized and always has some nice boxes in the middle of the store organized by teams. So it is kinda cool to search through the Penguins cards to see if something catches my eye. On the flip side I visited a card shop in Denver once and it was utter chaos. I'll admit I was a bit giddy with excitement at the chance at rummaging around in the beautiful mess that was before me. But alas, me and Mrs Gunny were on a bit of a time crunch so I only got to spend about 1 hour in that shop.

Don't even have a LCS near me. Closest one is mainly memorabilia, Pokemon, and only a little bit of sports cards and even then it's mostly boxes.
