Nothing, not even $100
Maybe next year if I find a 2023 Topps Complete Set for around $50, I'd do that. But most likely I'll just get a hand collated one for cheaper.

Like others, I'll cheat. Nothing unopened. But if I had that much extra cash to burn, I'd go for a Banks rookie card.

Ok I won't cheat I would buy $500 worth of unopened 2022 Topps Update and $500 on a 2018 Topps product. Only because you specified unopened and unless you are really careful vintage & junk wax era has serious issues between wax/gum stains and bricking due to improper storage.

Does an S&P 500 index fund count as baseball? The Stock Market is bound to make a come back. Hopefully in 5 years you will have $1k to buy some cards and still have $1k in your account.

Too many mature answers here for my taste. Where's the fun? If I HAD to spend 1k, I have lots of ideas. Maybe a Clemente rookie? Perhaps a Jordan rookie sticker? Maybe two Mantle base cards in relatively decent condition? Maybe an elusive Star RC basketball card????

Vintage definitely. Most likely the nicest 53 Topps Jackie Robinson $1000 would buy.

The two MAMMOTH-sized Notebooks (One Baseball & One Football) that have been sitting on the table of My Friend's LCS, for several months are the most desirable bunch of Sports Trading Cards that I really want to possess & share the duplicates. With cash in hand, I might be able to get both of them for under $1,000. They are loaded with mostly vintage, but also a nice assortment of some of the better cards from 1985-2018. May pursue before my Birthday, at the end of month, provided I get the OK from Our FAMSUE Enterprises CFO . . .

There is so many baseball products it is hard for me to know what would be worthwhile. If anything it would be a case of some hit-heavy release. I know for Hockey I had considered buying a box of The Cup during 2020, but unfortunately a lot other people apparently had the same idea and the stock dried up.
