Have completed the 1st series 1-300 cardsand I am missing 225 or so cards from Series 2 and 3
Should I just move om and assume I have a complete set because I have an unpened box of both 2 and 3 plus an additional 60 cards in clear packaging
or
open the boxes and see what I have?

You don't know you have a complete set until you have them sorted and all accounted for.

Yes, rip then open. Two reasons, one it's SOOOO hard to not open wax. Secondly, though, is the danger that the collation was good. Being early 90s there is a good chance that the collation is off and you have plenty of dupes/trips. Of course, I could be very wrong and you'll have the complete series in there. I know you stated that you only need 225 from those boxes combined, but again you'll never know for sure if you have it done unless you open. And, just occurred to me, it early 90s Stadium Club so you MAY (operative word) have some bricking issues.

You have to open to know. Trust me it seems like a for sure that you have a full collections now, but I can almost for sure say you would get every card you are missing in that box. There is a reason why I have so many junk era cards in my trade list. I opened 1990 Score series 1 & series 2 boxes and still don't have the full set. This along with random packs from lots. So I say open them and use the dupes to try and get the remaining cards from the set that you didn't find in packs.

I am all about ripping the packs. You are probably right that there would be a complete set in the boxes but the satisfaction of actually completing the set is a great feeling.

Open them, put them in pages, look through them every once in while.... else
why bother having them?
