Oddly enough, I've got one more to go in three different sets. In two cases, it's one more card for completion, and in a fourth case, it's the last non-short-print card in the set. Probably because I tend to collect so many different things, I fail to make finishing these sets a priority, but it would be nice to polish them off:

2021 Topps Heritage (1 non-shortprint card): No. 301 (Blue Jays rookie stars Pearson/Hatch)
I also had one more to go in the 2021 Topps Update -- 1986 Topps Baseball 35th Anniversary set (No. 86B-27 (Ohtani)), but a recent trade proposal from MMehler30 will complete that set. I appreciate that very much!
