Great list, but you left a “biggie” off.
The Championship Game of the (Men’s) NCAA Tournament aka March Madness.

I almost went with Game 7 of the World Series.  Baseball is the only sport I follow closely, but college basketball, in March, is pretty exciting.

Eating fish & chips & drinking a cold beer at the seaside.

Sorry, but I'd rather do that than spending money on any sports.

World Series Game 7. The teams wouldn't matter, I would just love to experience that atmosphere.

I picked the Super Bowl. I'd switch to World Series game 7 in a heartbeat if the Cubs were playing.

Having been to a number of events on the list, each one has a unique atmosphere. No Super Bowl.  Didn't attend any game 7s, but was outside the stadium/arenas celebrating the Tiger, Red Wings, & Pistons.  The big races(been to both), again unique atmosphere. Been to the U.S. Open but not the Masters. Imagine they are comparable. The Derby experience is one of my favorites. Been there 6 times. One huge gathering/party for a 2-minute race.

That said, I went with the World Cup. The atmosphere, for me, would be beyond description.

I was torn between the world series or the NBA finals. My 3rd choice would be the Superbowl.

Caribbean Series baseball championship would likely be a fun event. But i picked the World Series.

I'm mostly organizing over adding right now.
